Why doesn't the account owner see me?
When you watch a story inside the Instagram app, Instagram records your account in the story's viewer list, and the owner can see exactly who watched. That list is built from logged-in views: your account ID is attached to every story you open. This is why there is no truly anonymous way to watch stories from within the app itself.

Tips
Remember the 24-hour clock: if a story matters to you, download it while it's live. Once it expires it's gone from the Stories tab, so saving important stories right away is the safest move.
